Easy Eats – 5 Ingredient Enchiladas
Ingredients
1 lb. ground beef
1 pkg large corn or flour tortillas
1 onion, diced
2 10 oz. cans red enchilada sauce
1 1/2 C. shredded Mexican cheese
Directions
Preheat oven to 375 degrees. Brown ground beef in large skillet. Drain excess grease and set aside. Dice onion and cook in pan for 2 minutes. Add onion, 1 can of enchilada sauce, and 3/4 cup Mexican cheese to browned meat. Mix together and heat for 2 minutes. Fill tortillas with meat mixture and roll. Place enchiladas into baking dish. Cover with the remaining can of sauce and cheese. Cook for 20 minutes or until cheese is melted. Serves well with rice!
